I’ve decided to implement an interim, two-pronged strategy regarding breakfast: 1) more food to begin with; 2) better snack options. For instance, this morning I made the anticipated bagels and cream cheese but also cooked up a pot of oatmeal with raisins. Boys ate. Last night I made a batch of oatmeal breakfast bars, calling them “Second Breakfast Bars” and sending them to school in knapsacks. I just had one myself…not bad, but the recipe could use a little tweaking. Not exactly bland, but not quite Awesome either. More cinnamon? Some ginger? Diced apple? We’ll see.
Since our grocery fund got bumped up last month, and it looks like we’re going to come in nicely under budget this month, I’m going to have room to maneuver with bigger breakfasts and hearty snacks. I think I need to put more thought into breakfast as well, possibly with more night-before or over-the-weekend preparation. I’ve gotten some great feedback and ideas for this, so thanks and keep them coming.
